More Bread

This is a wheat bread recipe I got off of allrecipes. It's not whole wheat, but it's a new favorite. It makes 3 loaves, but I only have two loaf pans so I made rolls for the third batch and they were yummy too!
Wheat Bread

Ingredients3 cups warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
1/3 cup honey
5 cups bread flour
3 tablespoons butter, melted
1/3 cup honey
1 tablespoon salt
3 1/2 cups whole wheat flour
2 tablespoons butter, melted (I use Eart Balance Vegan Butter)

Directions
1.In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
2.Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
3.Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
4.Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

Bread, Bread, Bread

I just logged on to post a bread recipe my sis-in-law requested and noticed that Brooke just did Zucchini Bread yesterday! I guess it's bread week.Chocolate Banana Bread

1/2 c. softened butter
2 eggs
2 Tbs cocoa
1 tsp salt
1 tsp baking soda
1/2 tsp cinnamon
1 tsp vanilla
1 c. mashed ripe banana (2-3)
1/2 c. sour cream
1 c. sugar
1 c. white flour
1/2 c. wheat flour
1/2 c. chocolate chips

Beat eggs and butter together. Beat in cocoa, salt, baking soda, cinnamon and vanilla. Add and beat banana and sour cream. Mix in sugar. Mix in flour. Stir in chocolate chips.
Bake in loaf pan for 55 minutes at 350.

White Chip & Coconut Chocolate Swirl Cake

1 cup butter, softened
2 cups sugar
2 tsp vanilla extract
3 eggs
2-3/4 cup plain flour
1-1/4 tsp baking soda, divided
1/2 tsp salt
1 cup buttermilk or sour milk
1 cup chocolate syrup
1 cup white chips
1 cup sweetened coconut flakes

Beat butter, sugar and vanilla in large bowl until fluffy. Add eggs; beat well. Stir together flour, 1 tsp baking soda and salt; add alternately with buttermilk to butter mixture, beating until well blended.
Measure out 2 cups of batter and place in seperate bowl. Stir in syrup and remaining 1/4 tsp of baking soda. Add white chips and coconut to remining original batter. Pour into a greased and floured 12-cup fluted pan or 10-inch tube pan.
Spoon chocolate batter over vanilla batter in pan, do not mix.
Bake 65 - 70 minutes in a preheated 350 degree oven. Check with toothpick (cake will sink in center). Cool 15 minutes in pan, then remove to wire rack to cool completely.
Glaze or frost if desired.
20 servings.

Whole Wheat Blender Pancakes

This is a great recipe for those who stored wheat because we are supposed to for food storage, and then realized that you don't even have a wheat grinder. It's also a good recipe to use your homemade yogurt in! My grandmother wrote a wheat cookbook and was always experimenting with wheat. I like to do the same, unfortunately my husband isn't a wheat fan. He liked these though!

WHOLE WHEAT BLENDER PANCAKES

1 overflowing cup of white wheat kernals
1 cup milk
1/2 cup plain yogurt
1/2 cup oil
1/2 teaspoon salt
3 Tbs sugar or honey
1 Tbs baking powder
2 eggs

Combine wheat and milk in blender and blend for 3 minutes.
Add yogurt and blend for 2 more minutes.
Add remaining ingredients and blend just until mixed.
Pour thin batter onto hot griddle to form pancakes.
